The Reality of Cooking

"While you can have a virtual friend and play scrabble online, you cannot cook a virtual
sag aloo. The sensation of chopping and slicing and stirring, the smell of the chilli powder
and tandoori masala as it simmers with the olive oil and chopped tomatoes and onions and
potatoes are all so gloriously real - and they demand that one is engaged in the living moment.
Now that I cook, I want to invite others to share my food. While so much of modern life is passive,

cooking demands an active engagement with the present, and it reminds us that life is not a spectator sport -
it is there to be savoured"
